The Audi in the Nice car chase alternates between an A8 and a S8 (should be S8 as ordered by Larry earlier). S8 has silver mirrors and a three-spoke steering wheel. In some shots, the Audi has body colored mirrors and a four-spoke steering wheel that comes with the regular A8.
Gregor is driving a Jeep Cherokee with an automatic transmission when he picks up the man to do the transaction for the case. When he stops at the playground, he clearly puts the car into park. When he presses on the gas, the car lurches forward, even though it is still in park, and he is able to shoot the man in the head.
During the early arms deal, when they are waiting in the car for the arms dealers to turn up, Sam (in the back seat) is initially unshaven, but a little later he is clean-shaven.
The car Deirdre drives in the final Paris car chase is an early-90s BMW 5-series. It is badged as M5, and has the correct wheels for this model. However in the tunnel scene, the dashboard shown is from a non-M 5 series, as all M models have red needles on the speedo etc, and this car has white needles.
During the Nice chase, the Audi's headlights become quite damaged and displaced after it repeatedly bumps into the Citroen XM. As it goes down the offroad track, the driver's side headlight is completely hanging out of its socket. As the chase enters the city the headlights appear less damaged, with the driver's side one back inside its socket again and at the end of the chase the headlights are almost fully intact again.
Jean-Pierre claims that "All 47 of them committed Seppuku," but in fact only 46 did. The 47th Ronin, Terasaka Kichiemon, had a different mission. He was later pardoned. When he died at 87, he was buried along with the other 46.
When the bullet is removed from Sam, he notes that it was sprayed with Teflon and claims that this is why it has penetrated the bulletproof vest. This is incorrect. Merely spraying a regular bullet with Teflon will not make it pass through body armor. Armor-piercing rounds must be constructed of extra hard materials that will not deform, and usually have pointed tips to spread the fibers of the woven material of the armor. The myth of Teflon bullets came from an early round by the KTW company which used Teflon to protect the gun barrel from these extra hard materials.
When Gregor shoots the guy in the car after nearly killing the little girl, blood sprays over the window, but there's no bullet hole. If the bullet exited his head, hence spraying blood, it should have gone through the window too.
Supposedly, the holders of the mystery briefcase are holed up in Nice, but when Sam and Deirdre go to check out the bad guys' security arrangements at their hotel, the hotel is in Cannes and the Michelin Green Guide that Sam is carrying is opened to a map of Cannes.
The "Grasshopper" actually consists of equal parts crème de menthe, white cacao and cream. The only part Sam gets right is the crème de menthe.
During the scene at Jean-Pierre's house, when Sam is telling Vincent how to remove the bullet from his side, he repeatedly uses the word "scalpel" when in fact the cutting instrument is merely an x-acto knife, an arts and crafts tool.

Vincent is supposed to be a mercenary or former intelligence agent with connections all around France to get whatever the team needs. Although it might seem incongruous that during the initial briefing he fails to recognize basic military terms, this is quite conceivably because Vincent is French and the briefing is not in his native language, so he is clarifying the vocabulary, not the concepts.
In the ice show, most of the crowd in the upper decks are clearly made of cardboard cut-outs. They never clap when everyone else is clapping. Especially evident in the crowd shots from the roof.
A model tree gets caught in the camera as it pans around Jean-Pierre's model Shogun - it snaps back and forth as the camera goes by.
If you listen closely while Mikhi and Natacha are walking from the limo into the ice arena some of the extras in the crowd perhaps thinking they are there to see the famous ice skater are calling out Katarina - the name of the actress rather than her character name.
