A very simple recipe, Garlic Tomato Eggs is almost like an omelette, but with a umami flavour due to the addition of tomatoes. The garlic gives an extra punch to it. Loaded with nutrition, it is an ideal breakfast or dinner for those who are on a keto diet or are avoiding carbs. It is filling and delicious and goes well with a cup of black coffee.


Ingredients of Garlic Tomato Eggs

2 Servings
  • 3 eggs- brown
  • 1 tomato
  • 3 cloves garlic
  • kosher salt as required
  • 1 1/2 teaspoon extra virgin olive oil
  • 1/2 tablespoon black pepper
  • 1 sprigs coriander leaves
  • 1/4 teaspoon oregano

How to make Garlic Tomato Eggs

Step 1 / 3 Heat the pan

To make this simple recipe, just heat a pan and add in olive oil. Once the oil is hot enough, add chopped garlic cloves, saute for minute.

Step 2 / 3 Crack open the eggs

Crack open the eggs on the pan, place the tomato slices, sprinkle spices and add fresh coriander leaves. Cover the lid and allow the dis to cook in steam.

Step 3 / 3 Serve hot

Once the egg appears cooked, turn off the flame and serve hot with your favourite drink and enjoy.


Tips
  • You can add some grated cheese and chili flakes.
  • You can also add shreeded chicken.
