Janusz Kapusniak is a full professor of agricultural sciences in the field of food technology and nutrition employed at Jan Dlugosz University in Czestochowa (Poland). Since 2016, he has been the vice-rector for Research and International Relations and the Head of the Department of Dietetics and Food Studies.  For several years, he has been leading a group conducting research on physical, chemical and enzymatic modification of starch for food (dietary fibre, prebiotics, dietary supplements) and non-food applications (hydrophobically modified starches as packaging material, biomaterials of new generation from cereals and milling processing, microcapsules for controlled release). He is a member of the European Polysaccharide Network of Excellence (EPNOE), a member of the Committee on Food and Nutrition Sciences of the Polish Academy of Sciences, the Polish Society of Food Technologists, and a member of the Board of the Carbohydrate Technology Section, the Polish Chemical Society. Moreover, he is an expert in the Team of Experts of the Conference of Rectors of Academic Schools in Poland (CRASP), the National Agency for Academic Exchange (NAWA). He has supervised 5 PhD students. Prof. Kapusniak has published more than 100 peer-reviewed articles and 5 chapters in books. He is the author of 5 patents.
