This recipe is very flavorful and quick to prepare. You can have it vegetarian style just by not adding any meat.
Recipe Ingredients:
1/2 large sweet onion
1 1/2 tsp. canola oil
2 Tbsp. curry powder
1 Tbsp. cumin
1 tsp. cinnamon
10 oz. chopped spinach, drained
2 large sweet potatoes, peeled & diced
1 can chickpeas, rinsed & drained
1 1/2 cup water
1 can diced tomatoes
1 package instant ramen noodles.
1 can chicken
Directions:
Cook sweet potatoes until tender. You may boil or bake the sweet potatoes.
While the sweet potatoes cook, heat canola oil of canola oil over medium heat. Add onions and saute 2-3 minutes, or until they begin to soften. Add curry powder, cumin and cinnamon and stir to coat the onions evenly with spices. Add tomatoes with their juices and the chickpeas, stir to combine.
Add 1/2 cup water and raise heat up to a strong simmer for about a minute or two meat add the fresh spinach, a couple handfuls at a time, stirring to coat with cooking liquid.
Add canned chicken. Cover and simmer until the spinach is just wilted, about 3 minutes. Add the cooked sweet potatoes to the liquid and stir to coat.
Simmer for another 3-5 minutes or until flavors are well combined. Cook Ramen noodles according to package and place on serving dish. Top Ramen noodles with the mixture and serve.
