Baked Lemon Chicken

Weekdays are tough, work, school, errands, there’s never enough time so any meal that can be prepped ahead and tossed in the oven is alright with me.

This Baked Lemon Chicken is moist and crispy at the same time and the flavors are so comforting you’d think you spent all day making it.

Baked Lemon Chicken

Ingredients:

6 chicken thighs
1/2 lemon, juiced (or 1/4 cup bottled lemon juice)
1/4 cup olive oil
2 teaspoons oregano
2 teaspoons garlic salt
ground pepper

Instructions:

Wash and pat dry chicken, place in a freezer bag. Add the lemon, olive oil, oregano and garlic salt. Place in the refrigerator for 6-8 hours.

Preheat oven to 375 degrees. Prep a baking sheet with a wire rack and place the chicken on top, discarding the marinade.

Bake for 50 minutes until juices run clear.

    I’ll have to say that I do my chicken the same, sans the plastic bag though. Didn’t think to do it that way, must make a note to self. And it certainly is a big hit with the kids! How come you took the star ratings away?

    Doh! I forgot to take the chicken out of the freezer so I could make this! oh well – tomorrow. This recipe looked so yummy and easy that I sent it to a friend of mine who could really use it and they can’t wait to try it! I’ll let you know how it goes.

    Just made this last night, and it was very “ono.” My 4 y.o. son really loved it, and my husband liked it, too. I liked how it came out really crispy and tasty on the outside and soft and juicy on the inside. Also, it was so easy to make! I need more recipes like that.

    Last night was the second time I made this and I LOVE this recipe. Commuting home after work and having to cook dinner in addition to some cleaning, this recipe hits the spot. It’s so darn easy and with your foil tip – my husband loves the clean up! I did this recipe with boneless thighs and it still turns out great! This is officially in the dinner lineup for our house – thanks for saving me time with such a yummy and simple recipe!

    Yes, my son loved this chicken! I had to leave them in the oven much longer than the recipe calls for, but it was worth it to be able to eat the skin…mmmmmmmm! One of the easiest recipes ever, with such a great result!
