Cap’n Crunch Chicken

Dinner for breakfast? I do it all the time but here’s a different take, make chicknen with cereal! Not just any cereal either, Cap’n Crunch which truly lives up to it’s crunchy name. It’s the perfect coating for a crunchy oven baked chicken with just a slight hint of sweetness.

Cap’n Crunch cereal gives this savory oven fried chicken a hint of nostalgic familiarity. This is a definite fave weekday dinner with the kids!

Cap’n Crunch Chicken

Ingredients:

2-1/2 cups Cap’n Crunch cereal
1 cup Cornflakes (plain)
1 egg
1/2 cup milk
1/2 cup all-purpose flour
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon black pepper
2 pounds chicken pieces (or breasts cut into tenders)

Instructions:

Preheat the oven to 350 degrees. Prep a sheet pan by lining it with foil and place a wire rack on top.

Place the Cap’n Crunch and the Corn Flakes in a freezer bag and crush with a rolling pin or use a food processor, the finer the better.

Ready an assembly line, first the dry ingredients. Whisk together the flour, onion powder, garlic powder and black pepper in a bowl. Set aside.

In a separate bowl beat the egg and the milk. Set aside.

Finally, the crushed cereal.

Wash and dry the chicken. Dredge the chicken in flour, shaking off the excess. Then dip in the milk mixture, then finally the crushed cereal.

Place the chicken on the prepped sheet. Bake for 1 hour until juices run clear.

    Hi Vicki. Well, it’s just a sweetened corn cereal. I took a look but I don’t know what the equivalent would be over there. I’d send you a box if it didn’t cost me a million dollars to ship!

    I swear some people do not appreciate my germophobias. My husband, his family have all looked at me like I am crazy for cleaning my meat before cooking it. Pfft. Pfft.

    I want to make this for dinner tomorrow night but have a timing issue. Could I bread it tonight? Could I cook it tonight … does it reheat well? Thoughts?

    I made this tonight for my family, and they absolutely LOVED it! This is definitely a recipe I’ll be adding to my own personal cookbook.
    And Jesser: If you cook / bread it tonight, it’ll be soggy, which isn’t good. It takes about 2 minutes to coat all the pieces, then you just pop it in the oven. And trust me… it’s well worth it.
