Hearty Chicken Soup

My in-house MasterChef Jr does it again. The Baby loves to cook and watch kid’s cooking shows. This week he decided to make chicken soup, his way. We talked about what ingredients might go well in soup and he looked in the pantry and chose his own ingredients, knowing what flavors he likes.

Chicken soup with a touch of sweet sausage and warm potatoes makes this a hearty dish for the oncoming cold weather. Compliments can be hard to come by from siblings but this recipe even garnered rave reviews from his older brother. Fingers crossed he makes this dish for us every week!

Hearty Chicken Soup

Ingredients:

1 Tablespoon olive oil
1 small onion
1 carrot, diced
2 ribs celery, diced
1 cup Sweet Italian Sausage, diced
32 ounces chicken broth
1 large potato, diced
1 cup corn
1-1/2 cups roast chicken, cooked and diced
1/2 teaspoon cumin
1/2 teaspoon garlic powder
freshly ground pepper

Instructions:

In a large pot over medium high heat add the olive oil and cook the onion, carrot and celery until soft.

Add the sausage and cook for 5 minutes.

Pour in the chicken broth, add the potato, corn, chicken, cumin, and garlic powder and bring to a boil. Turn down the heat and simmer for 12 minutes or until the potatoes are soft.

Season with freshly ground pepper to taste.
