Horchata Coffee Cake

You can have your peanut butter and jelly, peas and carrots, Bert and Ernie–to me one of the greatest combinations in the world is cinnamon and sugar. Churros are constantly on my mind, as is a breakfast of cinnamon toast, and ohh Mexican hot chocolate, that’s good too. The world if full of cinnamon, we just need to go out there and grab it.

My mom told me that a recipe for the famed LAUSD coffee cake had surfaced and while I’d never had it myself, the thought of a warm cinnamon cake wouldn’t leave my thoughts. The cake is so legendary that articles have been written about it and copycat recipes have been created. Normally I’m eager to recreate any recipe or food my mom mentions, but in quarantine it’s been a little bit harder to jump on these whims.

Still I was inspired, and pandemic or no, one thing’s for sure–I always have horchata in my fridge. And while my frosted horchata cake is a always a winner, I decided to create an easy one bowl recipe perfect for quarantine, inspired by the legendary coffee cake and its heavenly cinnamon scent. Since we’re all home alone, you can eat it out of the pan since no one’s around to judge you.

This quarantine dessert may not be the same cake she remembers, but it should quell any cake cravings she may have. Now I just have to drop it off 6-feet away from her.

Horchata Coffee Cake

Ingredients:

2-1/2 cups all-purpose flour
1 cup brown sugar, packed
1/2 cup white sugar
1 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup vegetable oil
1 teaspoon baking soda
1 teaspoon baking powder
1 egg
1 cup horchata
1 teaspoon vanilla

Instructions:

Step 1: Preheat the oven to 350 degrees. Prep a 9×13-inch pan with non-stick spray.

Step 2: In a large bowl stir together the flour, brown sugar, white sugar, nutmeg, cinnamon, and salt.

Step 3: Stir in the oil until the mixture is crumbly. Set aside 1/2 cup for the crumb topping.

Step 4: To the bowl add baking soda, baking powder, egg, horchata, and vanilla. Stirring until just combined.

Step 5: Pour in the prepped pan. Sprinkle the crumb topping evenly over the batter.

Step 6: bake for 30 minutes.

Step 7: Let cool. Slice into squares to serve.
