Lychee Tea Chicken

My friend Deb always gives me good food omiyage when I see her. Last year she gave me artisan marmalade which I made into Hello Kitty hand pies. This time around I got some nice Teance loose leaf Lychee Tea!

Now, you’d think ‘hey, iced tea’ but that’s not where my brain stops, I thought the flavorful tea would lend itself to a tasty chicken dish. The fragrant lychee plus a little soy and sugar cooking all day in the crock pot makes a nice pulled chicken with an almost kalua pork-like texture. A nice nod to the islands courtesy of my friend Deb!
