Roasted Pork Loin

The Baby and I love to watch kid cooking shows and MasterChef Jr is one of our favorites. The second season has just begun and Gordon Ramsay, Joe Bastianich and Graham Elliot do a great job of mentoring and encouraging the kid-testants.

In our own house, The Baby has become my littlest sous chef. Watching me create my Nerdist recipes all day inspires him to challenge himself. He often asks to cook dinner and slowly has been taking on more complicated dishes.

We talk about ingredients and preparation before we put together a recipe and since he’s a born carnivore, he decided on a roasted pork loin, very easy prep and oh so savory and delicious. If you don’t have an 8-year-old to make this for you don’t worry, it’s easy to do all on your own.

Roasted Pork Loin

Ingredients:

1-1/2 pound boneless pork tenderloin
2 Tablespoons Dijon Mustard
1/4 cup breadcrumbs
2 Tablespoons Parmesan Cheese
1 Tablespoon olive oil
1 teaspoon parsley
1 clove garlic, minced
salt and pepper

Instructions:

Preheat the oven to 400 degrees and place the pork tenderloin on a non-stick foil lined baking sheet.

Season the pork with salt and pepper then spread the Dijon Mustard all over the pork tenderloin.

In a small bowl combine the breadcrumbs, Parmesan Cheese, olive oil, parsley and garlic. Stir together then press into the mustard topped pork loin.

Roast in the oven for 15-20 minutes until a meat thermometer reads 145 degrees. Let rest for 5 minutes then slice and serve.
