Stewed Chicken & Tomatoes in the crock pot

Fresh tomatoes straight from the garden make a world of difference. I know not everyone has access to that but wow, the difference in flavor is amazing. Luckily a little Fairy dropped off an abundance of them on my doorstep.

Taking advantage of this wonderful gift I decided to cook up a a quick and healthy dinner. Crock pots are our saviors because you can throw a great meal together in the morning and come home to without a care in the world. Warm and flavorful, you’ll look forward to a fresh healthy dinner being fully prepared!

Stewed Chicken & Tomatoes in the crock pot

Ingredients:

8 chicken thighs
1 onion, chopped
6-8 tomatoes, cubed
4 cloves garlic, minced
8 ounces chicken broth
1 cup water
2 teaspoons onion powder
1 teaspoon oregano
1 teaspoon salt
1/2 teaspoon pepper

Instructions:

Place the chicken thighs in the bottom of the crock pot. Add the diced onion, minced garlic and tomatoes.

Pour the chicken broth and the water over the tomatoes.

In a small bowl stir together the onion powder, oregano, salt and pepper and sprinkle over the tomatoes.

Cover and cook and low for 8 hours. Serve over rice.

    what kind of thighs did u use? boneless? skinless?

    Bone IN thighs, with the skin on. Boneless tend to dry out too fast in the crock pot, though they are totally interchangable if that’s what you have!

    I find when I leave the skin on everything gets really greasy and the skin stays flabby if I don’t sear it in a pan first. What’s your secret??

    I made this today…yum yum yummy! SO good! And turned out to be a lifesaver cos I had to come home sick from work and this is the divine smell that greeted me. Its perfect cos its so warm and hearty and totally negated the need for me to cook anything when all I want to do is curl up in bed!
