Sugar Cane Chicken Drumsticks

I remember gnawing on sugar cane during childhood trips to Hawaii, while chewing on a stick doesn’t seem at all appetizing the sugary interior was well worth the effort. Sugar Cane adds a subtle sweetness to recipes and goes especially well with savory dishes.

Getting to the meaty center of a sugar cane can be rough going, but after all the back breaking work I simply wrap them up and freeze them so they can be used as needed! Pull them out for a quick weeknight dinner of these drumsticks, a leisurely weekend supper of Hawaiian roasted pork or if you’re having a Hawaiian themed party there’s nothing more impressive than mini versions of these chicken lollipops served on fresh sugar cane!

Sugar Cane Chicken Drumsticks

Ingredients:

8 slices sugar cane
1-1/2 pounds ground chicken
1 cup panko bread crumbs
1 garlic clove, minced
1/4 teaspoon minced ginger
3 Tablespoons brown sugar
2 Tablespoons soy sauce
1 Tablespoon Mirin
1 Tablespoon Pineapple Juice
salt and pepper

Instructions:

To get rid of the Sugar Cane’s rough exterior it must be peeled first. You’ll need one of your lesser knives, a hammer and a whole lot of patience and cautiousness. Carefully hammer the knife down the edge of the cane to peel off the hard exterior. After you make your way around all the edges you’ll be left with the meat of the sugar cane. Slice the cane into sticks and pound it slightly to release the sugary juices.

In a bowl combine the ground chicken, panko, minced garlic, minced ginger, brown sugar, soy sauce, Mirin and Pineapple Juice. Season with salt and pepper.

Prep a grill with oil and heat to medium.

Wrap the chicken mixture around the sugar cane to form a sort of lollipop, pressing the patty flat. Place on the grill 5-6 minutes each side, until the chicken patty is firm and cooked through.
