Sugar Cane Roasted Pork

As a kid I remember driving through Hawaii and seeing miles and miles of sugar cane. It was fascinating to see how it grew straight up from the ground and it certainly didn’t look edible. Stands and tourist traps sold sugar cane as a novelty and chewing on it I always wondered how something so raw and earthy could produce sweet, natural sugar.

Those miles of sugar cane are long gone but the memories of fresh sugar cane have always stuck with me. When two stalks of fresh sugar cane showed up in my CSA box I was taken aback but couldn’t wait to come up with recipes that would use it in it’s natural form.

Peeling off the outer husk of sugar cane is a tough job but worth it. Once it’s bruised up a little, the natural sugars start to seep through and the flavor will work it’s way into the food. This pork is a succulent treat reminiscent of the islands.

Sugar Cane Roasted Pork

Ingredients:

3-4 pounds pork butt/shoulder
1 onion, sliced
8 slices sugar cane
2 slices ginger
1 clove garlic, minced
3 Tablespoons brown sugar
2 teaspoons cumin
2 teaspoons chili powder
1 teaspoons garlic powder
1 teaspoon salt
fresh ground pepper
11 oz coconut water
juice of half an orange
juice of half a lime

Instructions:

To slice sugar cane you must peel it first. You’ll need one of your lesser knives, a hammer and a whole lot of patience and cautiousness. Carefully hammer the knife down the edge of the cane to peel off the hard exterior. After you make your way around all the edges, the big payoff is the sweet interior!

Slice the cane into sticks and pound it slightly to release the sugary juices. On the bottom of the crock pot, layer the sugar cane sticks on top of the sliced onion. Place the pork on top followed by the ginger and garlic.

In a small bowl combine the brown sugar, cumin, chili powder, garlic powder, salt and pepper. Rub it into the pork.

Pour in the coconut water, orange juice and lime juice.

Set the crock pot on low for 6-8 until the pork is cooked through and falls to pieces.
