Yakitori

You may know that skewered chicken with bell pepper, onions, etc, those are called kebabs. The Japanese version that is just chicken, marinated slightly, is yakitori.

Everything tastes better on a stick, just remember to soak the skewers. This is a key step so the wood doesn’t burn on the grill!

Chicken on a stick, plain and simple, you won’t find an easier weeknight dinner!

1/2 cup soy sauce
1/4 cup mirin
2 Tablespoons sugar
2 Tablespoons sake
freshly ground pepper
skewers

Instructions:

Soak the skewers in water for 30 minutes.

Drain the skewers and set aside.

Cut the chicken into small, bite sized pieces and skewer. Place in a 9×13 pan.

In a bowl stir together the soy sauce, mirin, sugar and sake. Pour over the skewered chicken and marinate for 2-4 hours. Turning to make sure all of the chicken is marinated.

Prepare your grill, either indoor or outdoor will work fine. Place the skewered chicken on the grill and keep turning it so it doesn’t burn. 3-4 minutes each side until the chicken is no longer pink in the middle. Serve hot.
