Apparatus Room in Foundation Hotel opens May 15

Michelin-starred chef Thomas Lents returns to Michigan to oversee the hotel’s modern American restaurant

Soon, Detroit diners can enjoy cured sea trout, confit suckling pig, grilled langoustine and other crafted dishes in a space that once housed fire engines and related equipment.

The Apparatus Room, the highly anticipated restaurant helmed by Michelin-starred chef Thomas Lents, will open in the Detroit Foundation Hotel on May 15.

Serving modern American cuisine, the restaurant at 250 W. Larned will focus on craft cocktails, craft beer and will include a coffee counter featuring Anthology Coffee drinks and pastries.

Lents is a Michigan native and James Beard Award finalist who previously ran the restaurant Sixteen in Chicago’s Trump Tower.

“I am thrilled to return home and join this exciting moment in Detroit’s story,” said Lents in a press release. “In many ways the growth of the culinary scene in Detroit mirrors the growth and transformation we’ve seen in the city as a whole. As a chef, I am eager to work alongside the local farmers and food purveyors to bring our menu to life.”

The Foundation Hotel is a five-story, “100-key” property built in the former Detroit Fire Department Headquarters. The Apparatus Room is named so because it is in the area that was used to store fire engines and equipment.

The restaurant, designed by Detroit-based McIntosh Poris Associates and Simeone Deary Design Group has an open kitchen and a communal bar.

The Apparatus Room will be open daily. Breakfast will be served weekdays 6:30 a.m.-10:30 a.m. with brunch service from 10:30 a.m.-2:30 p.m. Sat.-Sun. Lunch is 11 a.m.-2 p.m. weekdays. Dinner is 5:30-10 p.m. Mon.-.Sat. and 5:30-9 p.m. Sundays.
