Shami kebab
Shami kebab is one of the most delectable appetisers of the Indian cuisine. It acquires its taste from mutton mixed with eggs and the flavours of spices. Serves three.
INGREDIENTS
500g minced lamb
1 teaspoon salt
600ml water
10 garlic cloves
1 teaspoon cumin seeds
4 cardamoms
1 inch piece cinnamon
1 inch piece ginger
6 peppercorns
4 red chillies
100g chickpeas, soaked
2 eggs
5 green chillies, finely chopped
1 medium onion, finely chopped
Clarified butter, as required
METHOD
1 Boil mince in salted water until the meat is tender and the liquid fully absorbed.
2 Grind the meat to a fine paste.
3 Combine the garlic, cumin seeds, cardamoms, cinnamon, ginger, peppercorns, red chillies and soaked chickpeas and grind to a fine paste.
4 Mix well with the meat paste. Add the beaten eggs and prepare a uniform dough.
5 Add the finely chopped green chillies and onion to the dough and mix well.
6 With clean hands, shape the dough into small round flattened balls or kebabs.
7 Heat the butter in a frying pan and fry kebabs until golden brown and lightly crispy. Serve hot.
