Italian Cioppino
Italian Cioppino is one of the popular stews and soups served in Italy that is made using fish. Although primarily a fish stew, Cioppino also invites a great mix of seafood varieties, often cooked in fresh tomato and wine sauce based broth. Serves 4.
INGREDIENTS
40ml olive oil
2 garlic cloves
200g finely chopped onion
100ml dry white wine
100ml clam juice
1/2 can Italian plum tomatoes, drained, seeded and chopped
50g chopped fresh basil
1 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon red pepper flakes
12 mussels cleaned
125g cleaned shrimp
250g cod cut up large chunks
1/2 tablespoon balsamic vinegar
750g linguine cooked
METHOD
1 In a casserole dish heat the oil over a medium heat.
2 Add garlic and onions and saute, stirring frequently until translucent, about 8 minutes.
3 Add wine and cook until reduced by half. Add clam juice and canned tomatoes. Cook uncovered for 30 minutes.
4 Stir in the basil, salt, thyme and red pepper flakes. Add mussels; cover and simmer until shells open, 1 minute.
5 Stir in shrimp and cod; cover and simmer until opaque about 4 minutes.
6 Stir in vinegar. Serve over linguine.
