How to make Nigella Lawson's banana bread recipe
Ingredients:
175 grams rice flour
100 grams ground almonds
Two teaspoons gluten-free baking powder
½ teaspoon bicarbonate of soda
¼ teaspoon fine sea salt
500 grams (total weight with skins) very ripe or overripe bananas
Two teaspoons vanilla extract
100 grams full-fat Greek yoghurt (at room temperature)
Two large eggs (at room temperature)
125 millilitres vegetable oil
125 grams soft light brown sugar
100 grams roughly chopped walnuts
150 grams roughly chopped dark chocolate
Method:
1. Firstly, preheat the oven to 170°C/150°C Fan/325°F and line a 2lb loaf tin with baking paper. A 1lb tin can be used if you're planning on halving the quantities.
2. Next, mix together the rice flour, ground almonds, baking powder, bicarb and salt in a bowl and set aside.

3. Then, in a large bowl, mash together the peeled banana before beating in the Greek yoghurt and then, one by one, the eggs, followed by the oil and sugar.
4. Once everything is combined, gradually beat in the flour mix. Once combined, scrape down the sides and fold in the chocolate chips and walnuts.
5. Pour and scrape the batter into the lined loaf tin before baking it in the oven for 45 to 55 minutes until it starts shrinking from the sides of the tin. A wooden pick should come out clean with a few damp crumbs on it. Leave the cake to cool completely on a wire rack before removing it from the tin.
