Nigella Lawson's 'curry in a hurry' is 'easy' and 'divine,' fans say

This is the perfect recipe to make if you're in a time-bind, Nigella Lawson says.
Fans say her "curry in a hurry" made with Thai green curry paste is billed by fans as "so easy," "divine" and "absolutely delicious."
Other recipes from the chef you can try include pesto pasta, lamb patties, lemon risotto or an Anglo-Asian salad.

Ingredients
- 2 tablespoons wok oil
- 3 tablespoons finely chopped spring onions
- 3 - 4 tablespoons green thai curry paste
- 1 kilogram chicken thigh fillets (cut into strips about 4 x 2cm / 1½ x ¾ inches)
- 1 x 400 millilitres can coconut milk
- chicken stock concentrate or cube
- 1 tablespoon thai fish sauce (nam pla)
- 185 grams frozen peas
- 200 grams frozen soya beans
- 150 grams frozen fine green beans
- 3 tablespoons chopped fresh coriander
- cooked rice or noodles to serve

Instructions
Heat the wok oil in a large saucepan with a lid.
Add spring onions, stirring for 1-2 minutes before adding the curry paste.
Add the chicken pieces, turning over to cook on all sides, for about 2 minutes, before adding the coconut milk, stock and fish sauce. Then add frozen peas and soya beans. Simmer for 10 minutes.
Add the frozen fine beans and cook for approximately 3-5 minutes.
Serve with rice or noodles and garnish with a sprinkle of coriander and a side lime wedge.
