Super spinach feta quiche
SUPER spinach feta quiche is something different from any normal quiche. This quiche uses a pre-made pie base for simplicity and is fi lled with a great mixture of eggs, milk, butter, spinach and feta cheese. It bakes in the oven for a short time, making a quick and dramatic treat. Serves 4.
INGREDIENTS
1 unbaked standard savoury pie
base, rolled into a circle
3 eggs, well-beaten
200ml milk
50ml butter, melted
2 tablespoons plain fl our
1/2 teaspoon salt
1/2 teaspoon ground white pepper
255g pack frozen chopped
spinach, thawed and
well-drained
110g feta cheese, crumbled
METHOD
1) Place the pie base in a quiche dish or 22cm pie plate, pressing until edges of the base come up the sides to the top. Flute the top edge, if desired. With a fork, prick the bottom and sides of the base.
2) Place the base in a 200C/180C fan/gas 6 oven and bake for 6-8 minutes, until golden. Remove and set aside.
3) Reduce heat to 190C/170C fan/gas 5.
4) In a large mixing bowl, combine eggs, milk, melted butter, flour, salt and white pepper. Whisk or stir with a large spoon until the mixture is combined. Stir in the spinach and crumbled feta cheese.
5) Pour the mixture into the baked pie base. Place foil around edges to protect from over-browning, if base is already brown.
6) Bake quiche at 190C/170C fan/gas 5 for 25 minutes or until a knife inserted in the centre comes out clean. Let quiche sit in the pan for 10 minutes. Cut into wedges and serve while hot.
