Prosciutto, parmesan and rocket rolls
A GREAT starter - make them an hour ahead. Also good for Christmas party bites if you make small ones. Lidl Primadonna olive oil, parmesan and prosciutto are some of the best ingredients around. Serves 8.
INGREDIENTS
4 tablespoons olive oil
1 tablespoon lemon juice
or balsamic vinegar
8 slices prosciutto ham
40g rocket
25g fresh parmesan, grated
Salt and freshly ground pepper
METHOD
1) Mix the olive oil with the lemon juice or balsamic vinegar. Lay out the prosciutto slices on a board and spread the rocket on top.
2) Scatter over the parmesan, drizzle with a few drops of the oil mixture, then season and roll up so the rocket is poking out of the top.
3) Cut each roll in half, place a couple upright on each plate and drizzle with more of the dressing.
