Making cucumber Kimchi with Black Ginger

For the sauce, you will need: 2 tbsp. salt, 2 tbsp. Gochugaru (Korean chili flake), 2 tbsp. sugar, 2 tbsp. rice vinegar and 2 tbsp. Mirin. For the vegetables, you will need 1 cup Persian cucumbers, 1/2 cup sliced red onions, 1/2 cup halved cherry tomatoes and 1/4 cup chopped scallions. To make, add the salt, Gochugaru, sugar, rice vinegar and Mirin together, then mix with the vegetables.
