I love making beef grillades because of their simplicity and rich flavor. They're also the ultimate comfort food when nestled into a bowl of creamy cheddar grits. This is a classic New Orleans brunch dish that you can easily make at home.

Technique tip: Use a meat thermometer to avoid over- or under-cooking. Take your beef off the grill a few degrees below your target temperature and let it rest. After a few minutes, your beef should come up to your target temperature, but make sure by checking the temperature at the center of the cut.

Swap option: You can use chuck roast or tenderloin in place of the round steak.

Special equipment: A meat tenderizer and grill or smoker.
