There’s a new virtual food court and food truck up and running on the Roseville-St. Paul border.

Tony Delaney, whose barbecue gained fanfare following the rollout of his Pig Approved BBQ food trailer in the fall of 2018, now has a bricks-and-mortar spot in Roseville by that same name.

He’s set up shop on Larpenteur Avenue just west of Lexington in the former La Tapatia space (La Tapatia moved a few miles away to another location in Roseville). There, he’s operating Pig Approved BBQ for takeout and delivery.

In addition to Pig Approved BBQ, there are two other concepts, Smoke ‘n’ Taco (smoked meat tacos and burritos) and The Hangry Rooster (crispy chicken sandwiches) running out of the space. The sister brands are meant to operate as ghost kitchens alongside the barbecue offerings. Anyone ordering online or in person can order from all three menus in one order.

If you’re not in the area but are craving the food, know that the Pig Approved BBQ food truck can be spotted across the metro with the schedule posted on the restaurant’s website.

Delaney’s been a chef for 15 years, with a wide range of experiences, from working as a chef/manager on food-service accounts to catering on private jets. He’s also worked at several restaurants ranging from raw vegan to barbecue concepts. After moving back to Minnesota from Houston in 2005, Delaney was missing traditional barbecue. He began competing in Kansas City Barbeque Society competitions in what started as a hobby but turned into a business.
