      Nice enough restaurant, but something, to me, seemed lacking.

      Not enough meat in the dished we purchased, maybe just my bad choice.

      I wouldn't go back.

      Ordered the American Wagyu SSAM and it was incredible!

      Pro-tip: skip the lettuce wraps and just eat the steak with the sides!

      4.5 Stars.

      Stylish ambiance in the lobby of the Paramount Hotel.
      We visited for happy hour and dinner. Although all the tables were fully booked, we managed to secure seats at the bar. The dishes were remarkably unique and exquisite.

      Steak Tartare ($10 for HH) - This was the best steak tartare I have ever tasted, beautifully presented as well!

      Beef Sliders ($10 for HH) - A bit on the salty side, but overall very delicious.

      Rice Cake with Beef Cheek Ragu ($21) - The rice cakes were fantastic--crispy and plump on the outside, chewy-soft on the inside. However, the ragu was quite fatty and, once again, very salty.

      Every dish was bursting with flavor! The staff was very attentive.

      Food: 7.5/10
      The food at Chan Seattle offers some highs and a few lows. The Beef Tartare was good, but it leaned too much on the sweet side, which muted the other flavors. However, the Pasta Sujebi stole the show with its incredible blend of textures and flavors--a definite 10/10 on its own. The Dolsot Pot with Sirloin was decent, but I think it could have been better. The spicy sauce didn't quite complement the dish, and the beef, while good, would have benefited from being thinner and cooked to a rarer doneness, especially given the intense heat from the stone bowl, which can easily overcook the meat as you take your time with the meal. The Black Cod was tender and delicious, but the braised radish, which I hoped would serve as a palate cleanser, was unfortunately too salty to enjoy.

      Ambiance: 8/10
      Chan Seattle has a really romantic vibe with its dimmed lighting, making it a great spot for a cozy dinner. The only downside is that the tables, especially those for two, are on the smaller side. If you order several dishes, it can quickly feel crowded, especially if you take your time savoring each course.

      Service: 7/10
      Service was solid and attentive, adding to the overall experience. It's a nice touch to see the open kitchen, with the smells of the food wafting through the restaurant, which adds to the atmosphere. There were a couple of times it felt like it was difficult to get the waitress's attention which is understandable given how busy it was but it doesn't feel great to constantly wave down a waiter.

      We decided to stop by on a whim after a show at the Paramount since it was so close by. I have been wanting to try this restaurant for a while now so it worked out great. They were able to seat us immediately without a reservation, which was a plus. The ambiance was very nice and ideal for a date night. Service was also very friendly and attentive.

      I was not very hungry coming in, so we ordered just a couple of dishes to share. I would definitely recommend the American Wagyu Coulotte Ssam. The Roasted Wagyu Bone Marrow was also good, but not the best I've ever had.

      Note: There is no restroom inside the restaurant, you will need to ask for a key card to use it in the hotel.

      Ordered takeout for rice cake. It turned out that they have three different kinds of rice cakes. I'm glad I asked about the differences and ordered the one I wanted.

      It was like an appetizer portion. There are four huge pieces of rice cakes, with a few slices of fish cakes and beef briskets, and one hard boiled egg. The flavor is sweet and spicy, not too spicy but definitely sweet.

      I ordered an early dinner so when I picked up the dinner, there were not too many people. I had a hard time finding out where the entrance was and I still think the one I found was not the front door. Anyway, the restaurant can be accessed through a hotel lobby.

      I have to say, and maybe it's my own fault, I was very underwhelmed by this place. Pics of the food and the fantastic wooden doors made it seem much more upscale. Not to mention attached to, what I would consider a nice hotel.

      The steak tartare was wonderful, but the bread that it sat on added nothing. The cauliflower was well cooked, but the purée, again, added nothing. And the hanger steak, I think that's right, was just meh (didn't get a pic) and the rice wasn't crispy on the bottom, so what's the point of the stone bowl?

      This place though wasn't expensive, so I guess we got what we paid for, two of us with two drinks, just around 120$. Dining area is cool, but casual, which I just wasn't expecting, the casual part.

      The staff was great, very happy with the service. And the sweet girl in training was so excited and really was soaking up the teachings of the more seasoned folks, which was fun to watch.

      Would try again, now I know what to expect.

      I recently came here for my birthday and had a wonderful time! It was our first visit, but making a reservation online was easy. The restaurant looks quite updated and super modern.

      We ordered the deep-fried rice cakes, steak tartare, Brussels sprouts, grilled pork jowl, and the smoked duck Sot Bap. Everything was fantastic! The rice cakes were addictive, the steak tartare was surprisingly refreshing, and the smoked duck Sot Bap was the star of the show--delicious, tender, and extremely flavorful. It could use a bit more duck, but it was still amazing.

      We each ordered a drink, and they were all delicious.

      Although it's expensive, I'll definitely be coming back.

      Came here for SRW and had a great experience!

      The restaurant looks modern and intimate, and I love their take on Korean fusion. Service was friendly and fast.

      The beef tartar was pretty good with raw egg yolk. The spicy rice cake was good - close to the fried version of the traditional one but too overpriced for what it is. We really loved the braised fish - I could taste the traditional fish jorim flavors and the fish was super buttery and tender. Our favorite dessert was the matcha tiramisu!

      I think normally, it might be too overpriced, but definitely worth coming for SRW!

      Modern Korean fusion done really well. Found this place randomly for a last minute birthday dinner and we were able to get seated pretty quick! This place is nestled within the lobby of a hotel and has a nice bar on the side for drinks while you're waiting for a table. Ambiance in here felt really upscale and made the dining experience even better.

      We ordered 7 dishes and we were amazed at how fast the dishes came out. Within 10 mins 5 of our dishes had already come out! The cooks back there must be working with super quick hands.

      Things ordered:

      Tuna Tartare (5/5): huge fan of raw fish and this tuna was extremely fresh

      Soy Cured King Salmon (5/5): extremely fresh as well, almost ordered another plate

      Rice Cakes (4/5): rice cakes were a bit mushy but the beef cheek that was on top was insanely tender and flavorful. The sauce that was on top was super rich as well

      Brussel Sprouts, bulgogi pork bites (4/5): loved the potato puree under these. All the fat and and flavor from the Brussels sprouts kind of seeped down into it

      Kimchi Stew (3/5): bit lack luster was missing that authentic taste

      Alaskan Black Cod (5/5): Get this! This was the best thing we had. The fish was extremely buttery and tender. Literally fell apart on poking it. Glaze that it was cooked in was packed with umami

      As for drinks, we ordered a round of espresso martinis and it made so well we ordered 3 extra rounds lol.

      Definitely would come here again to try the other dishes. This place is def a good choice for any special occasion or date night!
