One of the best hot pot places I have ever had in the greater Seattle area! Yes, it is very expensive ($80+ per person if you want to be full and have a hearty meal), and waits can be very long (1+ hour unless you make reservations a few days in advance minimum), but I would rather eat out half as much for the quality instead of settling for lower quality food that is just slightly cheaper. While my visit, according to my friend, is less than ideal, I cannot imagine how much better my experience would have been if everything worked out. There was no silver broth, and the ice cream machine broke, but these are very minor details in my overall experience here.
For each person, you will need to select a broth of your own, as the soup is individual. I personally got the oxtail broth and it was quite light and refreshing. I often lean towards dipping my food in the sauces as well for the varied experience. While broth selection is individual, the other things you order are meant to be family style - I would recommend the combos over individual items if you have at least 3 people in the party as they are generally cheaper and have better presentation. For example, we got the deluxe combo which was $78 but it has live prawn, scallops, abalone, wagyu cubes, and shrimp paste, and it is wonderfully presented with smoke (dry ice) for the additional flair. On the other hand, it was ~$40-45 for 6 pieces of live prawn itself, while the combo has 4 pieces already - you can sort of do the math that the combo is much better deal. We also got beef tongue, lamb and beef combo, vegetable combo, and hand crafted noodles. Everything is very high in quality, not much tendon in the meats, and the wagyu cubes are so soft and tender. The prawns, although a bit tiny and mostly shell, are very fresh and sweet. The vegetable combo is good but had the least value - most of our broths already came with some vegetables like mushroom and corn, so if I were to go again, I would probably not order that. However, more veggies is always good! We also got a pitcher of watermelon juice that is fresh squeezed - $15 for a pitcher is a bit pricey so I also wouldn't really order again, though it was very refreshing. It's definitely better than getting a cup for $5 as a pitcher is maybe 5-6 cups shared among the 3 of us.
Sauce bar is $3.99 per person but it also has other offerings beyond sauces, such as edamame, kimchi, cantaloupe, grapes, and peanuts. I personally really love the chili oil - not too spicy but also super aromatic. The initial sauce the waiter made for us is also very good.
At the end of the meal, they will also serve you some ice cream. The ice cream machine broke right before we got the ice cream, so we got Haagen Dazs ice cream which is probably better than the ice cream in the machine anyway.
Service is very good - before they showed us to the table, they gave a brief tour of the restaurant offerings so that we know where to go for what (sauce bar, etc). While we ate, they periodically pour more broth to the hot pot while you eat, and they also help refill water and other drinks you ordered even though we could do it ourselves at the table.
