One savoury and one sweet dish to treat yourself this Women’s Day – we guarantee it will be a delicious celebration

Besan Toast

Ingredients
1 cup besan (gram flour)
1/2 cup water or as needed
1/4 cup chopped onion
1/4 cup chopped tomato
1/4 cup chopped capsicum
1 green chilli, finely chopped
1/2 tsp ginger paste
1/4 tsp turmeric powder
1/2 tsp red chilli powder
Salt, to taste

Butter, for toasting
Bread slices

Method

  1. In a bowl, mix together the besan and water to a smooth batter. The batter should have a pouring consistency; adjust the water as needed.
  2. Add the chopped onions, tomato, capsicum, green chilli, ginger paste, turmeric powder, red chilli powder, and salt to the batter. Mix well.
  3. Place a non-stick pan on a medium flame to heat.
  4. Butter one side of a bread slice and dip that side into the besan batter, making sure it is coated evenly.
  5. Place the bread slice, coated side down, on the heated pan. Cook for one to two minutes until crispy and golden brown. Use a spatula to flip the bread slice over and cook the other side for a minute. Remove to a serving plate.
  6. Repeat with the remaining slices of bread.
  7. Serve the besan toasts hot with ketchup or any other dip of your choice.

Recipes to celebrate women's day - Besan Barfi

Besan Barfi

Ingredients
1 cup ghee
2 cups besan (gram flour)
1/2 cup milk
1 cup sugar
A pinch of cardamom powder
A pinch of salt
Chopped pistachios or almonds to garnish

Method

  1. Heat a heavy-bottomed pan on a low flame and add the ghee to it. Once the ghee has melted, add the besan to it and roast it on a low flame for 12 to 15 minutes, stirring continuously. The besan should turn golden brown and fragrant.
  2. In the meanwhile, in another pan, heat the milk and sugar. Cook on a medium flame, stirring occasionally, until the sugar dissolves completely.
  3. Add the cardamom powder and salt to taste to the sugar syrup. Mix well.
  4. Once the besan is roasted, add the sugar syrup to the pan and mix well. Cook, stirring continuously, until the mixture thickens and leaves the sides of the pan, about 10 to 12 minutes.
  5. Grease a plate or tray with ghee and pour the besan mixture onto it. Flatten with a spatula or spoon and allow to cool for 10 to 15 minutes.
  6. While the mixture is still slightly warm, cut it into small diamond-shaped or square pieces. Garnish with the chopped pistachios or almonds.
  7. Allow the besan barfi to cool completely before removing it from the plate or tray.
