Eggless Chocolate Truffle Cake
Ingredients
For the cake batter:
½ cup yoghurt
½ cup refined oil
1 cup flour
2/3 cup powdered sugar
1 tsp baking powder
½ tsp baking soda
1 tsp coffee powder
¼ cup cocoa powder
½ cup milk
For the chocolate ganache:
½ cup fresh cream
1 cup chopped dark chocolate
1 tsp butter
To garnish
2 tbsp sugar syrup
¼ cup dark chocolate
Method
- Sprinkle salt evenly in a 5-litre pressure cooker.
- Place the yoghurt and oil in a bowl and whisk together until smooth (two to three minutes).
- Sift together the dry ingredients for the cake batter – flour, powdered sugar, baking powder, baking soda, coffee powder and cocoa powder – and mix gently into the yoghurt mixture using the cut-and-fold method.
- Add the milk and beat for three to four minutes; do not overmix.
- Oil a cake tin, and dust it with plain flour, tapping out the extra flour.
- Pour the prepared cake batter carefully into the prepared tin, and spread it evenly with a spatula.
- Preheat the pressure cooker on a low flame for six to seven minutes with the lid on.
- Place the cake tin inside the preheated cooker, cover it with the lid (but without the ring and whistle), and cook on a low flame for 40 to 45 minutes. Check for doneness by inserting a toothpick into the centre of the cake – if the toothpick does not come out clean, cook for another five to six minutes.
- Remove the cake tin and set it aside to cool, before removing the cake from the tin.
- To prepare the chocolate ganache, warm the fresh cream, add the chocolate and butter, and whisk until smooth. Set aside.
- Slice the cake horizontally into two layers (you can use a thread to do this).
- Drizzle each layer with one tablespoon of the sugar syrup.
- Spread the ganache on the lower layer, then place the top cake layer on it.
- Cover the top and sides of the cake evenly with the remaining chocolate ganache.
- Decorate with dark chocolate curls and refrigerate for two hours.
