Embrace the versatility of chocolate with this eggless chocolate truffle cake made in a pressure cooker 

This simple recipe for an eggless chocolate truffle cake comes from The Tastes of India Podcast on Audible


Eggless Chocolate Truffle Cake 
Ingredients

For the cake batter:
½ cup yoghurt
½ cup refined oil
1 cup flour
2/3 cup powdered sugar
1 tsp baking powder
½ tsp baking soda
1 tsp coffee powder
¼ cup cocoa powder
½ cup milk

For the chocolate ganache:
½ cup fresh cream 
1 cup chopped dark chocolate
1 tsp butter 


To garnish

2 tbsp sugar syrup  
¼ cup dark chocolate


Method

  1. Sprinkle salt evenly in a 5-litre pressure cooker.
  2. Place the yoghurt and oil in a bowl and whisk together until smooth (two to three minutes).
  3. Sift together the dry ingredients for the cake batter – flour, powdered sugar, baking powder, baking soda, coffee powder and cocoa powder – and mix gently into the yoghurt mixture using the cut-and-fold method. 
  4. Add the milk and beat for three to four minutes; do not overmix.
  5. Oil a cake tin, and dust it with plain flour, tapping out the extra flour. 
  6. Pour the prepared cake batter carefully into the prepared tin, and spread it evenly with a spatula.
  7. Preheat the pressure cooker on a low flame for six to seven minutes with the lid on.
  8. Place the cake tin inside the preheated cooker, cover it with the lid (but without the ring and whistle), and cook on a low flame for 40 to 45 minutes. Check for doneness by inserting a toothpick into the centre of the cake – if the toothpick does not come out clean, cook for another five to six minutes.
  9. Remove the cake tin and set it aside to cool, before removing the cake from the tin.
  10. To prepare the chocolate ganache, warm the fresh cream, add the chocolate and butter, and whisk until smooth. Set aside.
  11. Slice the cake horizontally into two layers (you can use a thread to do this). 
  12. Drizzle each layer with one tablespoon of the sugar syrup.
  13. Spread the ganache on the lower layer, then place the top cake layer on it. 
  14. Cover the top and sides of the cake evenly with the remaining chocolate ganache.
  15. Decorate with dark chocolate curls and refrigerate for two hours.
