Macaroni Pasta Salad

Ingredients
1 cup elbow macaroni pasta
2 tomatoes, cut into small cubes
1 carrot, grated
2 green chillies, chopped
½ cup crumbled paneer
Salt to taste
Salad dressing
1 tsp coconut oil 

Method

  1. Boil the elbow macaroni pasta until cooked – al dente if you prefer. Drain the cooked pasta and set it aside to cool.
  2. In a large mixing bowl, combine the cooked pasta, diced tomatoes, grated carrot, chopped green chillies, and crumbled paneer.
  3. Season with salt according to taste.
  4. Drizzle the  salad dressing over the salad.
  5. Add the coconut oil for a subtle boost of flavour. 
  6. Gently toss everything together until well combined.
  7. The Macaroni Pasta Salad can be served immediately, or you may allow it to rest for a while to let the flavours meld together before serving.
