Method

Start by adding the oil to a large non-stick pan and set it over medium-low heat on the hob.

Add the finely chopped garlic and chilli flakes then saute for around two minutes.

Pour in the can of chopped tomatoes and add the capers, then bring everything to a gentle simmer. Leave to cook uncovered for 15 minutes then season to taste.

Add the olives and cook for a further five minutes. Meanwhile, bring a large pot of salted water to a boil (or fill it with boiled kettle water), and cook the spaghetti according to packet instructions.

When cooked to a slightly al-dente texture, drain the pasta and toss with the sauce ingredients in the frying pan. Add chopped parsley to serve.

While the dish is perfect on its own, it pairs well with seafood; such as mussels or salmon, as well as succulent chicken.
