 the participant teals are divided according the three days

- first day: starters dish/ sculpture of vegetables and fruits/
bakeries presentation (six types) / three levels cake/ Three
dishes of hot or cold salted / 3d cake
- second day: pizza dish (optional) / main dish with artistic
touches / Traditional main course with traditional touches
- third day: three various artistic and modern sweeties /
teams (three members) cold and hot cooking and desserts

Presentation of the association Golden Falcons activities

Overview of the association activities

Due of sanitary circumstance in the world and the suspension of


cultural activities and products commercialization of the big and
small companies through media and advertisement, we decided
thanks our partners inside and outside the country, to organize
national and international events in the field of traditional and
modern cooking. This events were successful and receive
satisfaction under the view of Arabic and national media and
sponsoring companies as well as followers.
we are going to mention a part of our work and broadcast in
Arabic and national radio stations as well as social media.

- from 11 to 12 am: cold starters competition/ artistic show for chocolate

- from 2 to 3 pm : cold starters competition / sculpture on fruit and vegetables

 honoring ceremony for the 1st rank winners and the international juries
committee that participated in the competition as well as organizers and
sponsors
 giving gifts and shields to coordinators as well to juries and sponsors
 giving golden medallion to the 1st rank winners
 Dinner ceremony in Hotel Hammamet concluding with music and departure
Feb 25th in the morning
The competition rules

- Respect of the safety protocol and wearing a mask to avoid infection


- identification of a list of needed materials
- respect of the norms and rules of cooking
- freedom of choice of recipe
- naming each dish with presentation of technical card
- the way of presentation
- 02 dishs of each category will be presented the same way( one for the juries and one
for the exposition)
- 10 minutes to prepare before presenting the dishes to the committee
- providing a hot main dish including all its ingredients
- respect of the space used for each group
- preparation of vegetables and cutting meats inside the specified place before
beginning the competition
- its forbidden to use non alimentary and chemical colors
- the components must fit with the main part of the dish and comply to the safety
norms
- it s compulsory to used the chef uniform (Jacket+ black pant+ and the chef hat)
- it s important to use gloves during the competition
The cooking materials

the international cooking kitchen used for the competition is composed of 10 cookers that
includes the following :

- 03 Pizza wood oven


- work tables stainless steel
- cooker of 4 fires
- electric oven
- electronic griller
- fridge

NOTICE: the candidates must bring their small materials ( dishes, knives…)
Law and rules of juries
- arbitrary norms
- candidates must present coherent dishes and similar with respect of safe alimentary
rules known by the law
- arbitrary points
- coherence of components: 20 marks
- way of preparation: 10 marks
- the taste: 50 marks
- hygiene: 10 marks
- the way of presentation : 10 marks

- Competition price points (medallions)

- from 60 to 69: certificate of participation

- from 70 to 79: bronze medallion and certificate of participation

- from 80 to 89: silver medallion and certificate of participation

- from 90to 95: golden medallion + certificate of participation

- from 95 to 100: the festival shield + falcons cup+ participation certification

- NOTICE: the winners of golden medallion will benefit of training session

participation fees

after the confirmation of participation, it s compulsory to pay fees before 15 days the date of
the festival

it is important to show the papers when coming to the festival and payment is done to
confirm the participation

the due date: the final date to receive participations is January 1st 2024, it s worth
mentioning that place are reserved and the list is about to be closed with the needed
number

- for the foreign participants, they can just subscribe in the association offices in their
countries and pay with their local currency to the responsible of inscription in their
office in order to confirm their reservation joined with the inscription form and a
copy of passport

the association Golden Falcons for cooking has the honor to invite its friends and its
sponsors in all its cultural and expositional activities through friendship chart or contract
between two parts. this contracts consists of supporting or covering the whole event and
festivals of the association, and it s worth to mention as follows:

- providing an important sum of money to support the festival directly or full cover
- presenting products related to the festival and the needed requirements
- providing reservation in hotels to the participants and present people
- providing various services like:
 offering means of transport to the invited and organizers and present people
during the festival
 offering logistic support to the festival
 providing advertisement and panels related to publicity and information about
the festival
