Father’s Day grilling recipes: Steak sliders, za’atar chicken thighs and more

Celebrate Dad with fun, easy menu ideas from chef Matt Abdoo.

Father’s Day is this weekend, but no need to wait until Sunday to spoil a father figure in your life! Why not treat him to an al fresco dinner ahead of time for an even bigger surprise? To help you get started, executive chef and partner of Pig Beach BBQ Matt Abdoo stopped by TODAY to share some of his favorite summer grilling recipes that are sure to be a hit.

There's a good chance Dad is going to steal Abdoo's steak sliders recipe for future barbecues. These grilled sandwiches are topped with caramelized onions and horseradish cream for a flavor combination you'll never get tired of. Or, if chicken thighs are more his thing, grill them with za’atar and serve with a side of homemade lemon-garlic yogurt. Pro tip: use a digital thermometer to make sure your meat is cooked to perfection.

Matt Abdoo's Father’s Day grilling recipes

Filet mignon is so tender that it’s perfect for eating in a slider and a great treat for Dad to have something special on Father’s Day!

The flavors of the za’atar evoke nostalgia for me, which pairs perfectly with the chicken and garlic yogurt for summertime grilling. Pile the chicken on warm pita bread for an incredible sandwich.

More recipes to make this week

Complete your Father's Day cookout with a round of burgers straight from the Pig Beach BBQ menu. They're smothered in a tangy sauce and pair especially well with Mexican street corn on the cob. Have a couple leftover chicken thighs from above? Switch up the flavors by making a hot honey marinade and brushing them with a sweet chili glaze.

Making your own barbecue seasoning may sound intimidating, but this recipe ensures a perfect balance of sweet and spicy. Better yet, it can be used on almost any protein you could want to cook with.

Grilled veggies don't get much better than this. Upgrade everyone's favorite summer produce by rubbing it in a creamy mixture of mayo and sour cream and sprinkling Cotija cheese and spices on top.

There's a reason this is one of our most popular recipes, and we think it may have something to do with the charred, sticky glaze. Or maybe it's the perfectly tender chicken. We'll let you be the judge.
