Cheese Stuffed Potato Balls

Ingredients
5 potatoes, boiled and mashed
½ cup finely-chopped onion
½ cup grated carrots + extra to garnish
½ cup finely-chopped coriander leaves + extra to garnish
½ tbsp grated or crushed ginger
½ tbsp finely-chopped green chilli
Salt to taste
1/3 cup grated processed cheese (or as required)
½ cup all-purpose flour
Breadcrumbs
Oil for frying
Tomato ketchup to serve 

Method

  1. Place the mashed potatoes in a large mixing bowl and add the onions, carrots, coriander leaves, ginger, green chillies, salt and cheese. Mix well together.
  2. Take a small portion of the mixture and shape it into a ball. Flatten it, place some grated cheese inside, and roll it back into a ball. Repeat with the remaining mixture and the grated cheese. Set aside.
  3. In a small bowl, mix the all-purpose flour with water to make a slightly thin paste.
  4. Dip each stuffed potato ball into the flour paste, then roll it in the breadcrumbs to coat evenly. Roll the coated balls between your palms to ensure that the bread crumbs stick well.
  5. Heat the oil for frying in a deep pan over a medium flame. Fry the cheese balls until golden brown. Remove them and place them on tissue paper to absorb excess oil.
  6. Garnish the cheese balls with grated carrot and coriander leaves, and serve hot with tomato ketchup
