This recipe for chocolate churros uses ingredients easily found at home and is ideal for a last-minute indulgence


Churros With Chocolate

Ingredients
For the churros:
2 cups water
1 tsp + 2 cups sugar
1¾ tbsp melted unsalted butter
¼ tsp salt
2 cups flour
1/3 cup finely-chopped walnuts
4 cups olive oil
1½ tbsp cinnamon powder

For the chocolate sauce:
3 cups milk
1 cinnamon stick
1/3 cup brown sugar
2 tsp flour
½ cup unsweetened cocoa powder

Chocolate Churros

 

Method

  1. To prepare the churros, pour the water into a medium saucepan with one teaspoon of sugar, the melted butter and the salt, and stir with a whisk. Bring the mixture to a boil.
  2. Add the flour and chopped walnuts and stir with a wooden spoon until a smooth paste forms (about two minutes). 
  3. Remove from the flame and form a dough. Allow the dough to cool for five to eight minutes. 
  4. Meanwhile, preheat the oil for frying in a large pan over a medium flame.
  5. To prepare the cinnamon-sugar mixture, mix two cups of sugar with ground cinnamon in a wide bowl. Set aside. 
  6. Place the cooled churro dough in a pastry bag with a star-shaped tip. Pipe out the dough in pieces on a cookie sheet, cutting with scissors if needed. Poke through each piece vertically with a wooden skewer to allow steam to escape during the frying process. 
  7. Fry four to five churros at a time, turning occasionally, in the heated oil until golden brown and crispy (about three to four minutes). Drain the churros on paper towels, then roll in the cinnamon-sugar mixture.
  8. Prepare the hot chocolate sauce: bring the milk, cinnamon stick and brown sugar to a boil in a medium pan, and remove from the flame as soon as it starts boiling. Cover and let the mixture stand. Add the flour and cocoa and stir well. Reheat to thicken slightly over a low flame (about 10 to 12 minutes). Pour into cups or glasses.
  9. Serve the churros with the hot chocolate.
