Mary Berry's quick and easy apple and pear open pie bakes in less than 30 minutes

This summer you can impress everyone at your barbecue or picnic by making Mary Berry's express apple and pear open pie.

If you’re looking for an easy dessert that looks impressive, Mary Berry’s express apple and pear open pie is a great recipe to have on hand, along with some ready-made pastry.

Using just six ingredients, this pie looks delicious and is ready to bake in less than 30 minutes.

If prepared according to the recipe, which was shared by the TV star on Mary Makes It Easy, this pie serves six, making it ideal for a dinner party or family gathering.

Ingredients

  • 200g/7oz Bramley apples, peeled, cored and roughly diced (prepared weight)
  • Two ripe pears, peeled, cored and roughly diced
  • Four heaped tbsp lemon curd
  • 500g ready-made puff pastry
  • One free-range egg, beaten
  • 30g/1oz demerara sugar
  • icing sugar, to serve

Instructions

First, preheat your oven to 220C (or 200C with a fan, or Gas Mark 7). To save time, you can even shove a baking sheet in there to preheat while you prep the rest.

Now, grab your chopped apples and pears and toss them in a bowl with some lemon curd. Make sure all the fruit gets a good coating.

On a floured surface, roll out your pastry dough until it's nice and round. Trim off any uneven edges with a sharp knife so it's about 33cm (or 13 inches) wide.

Carefully lift the pastry onto a baking sheet lined with parchment paper, making sure it doesn’t split or stretch.

Pour the apple and pear mixture into the centre of the pastry, leaving a border of about 7.5cm (three inches) around the edge. Give the edges of the pastry a brush with some beaten egg.

Now, fold the pastry border over and crimp it to create a nice seal, just like you would with a pasty. Brush the sealed edges with more egg, then sprinkle some Demerara sugar over the fruit and the pastry crust.

Carefully slide the baking sheet with your pie into the hot oven. Bake it for 35-40 minutes, or until the crust is golden brown and looks crispy.

For a nice, decorative touch, you can dust the top with some icing sugar before serving.
