Easily the best sushi I've ever had. Did the Omakase and was not disappointed. Higher end but felt like I got what I paid for. Will be back

For $150 we tasted the freshness of Japan in Seattle! This was my third time going to Sushi Kashiba and the quality has improved. The omakase menu this time has lots of sushi and a wide range of fishes. The sauce has definitely toned down on the salt and made the ingredients speak for itself. One highlight was the incorporation of mountain yam in the appetizer, tofu and tamago which shows how much they care about using the freshest ingredients at their prime time.
The service was very fast and the servers described the food in a way that makes it more appetizing. Super attentive where green tea was always refilled.
Sushi Kashiba is always packed so it's quite loud in the restaurant but it still feels elegant and looks super clean. I know it's not cheap but it's worth it!Helpful 0Thanks 0Love this 0Oh no 0 - 250151242May 25, 2024
It's been a week since my omakase experience here and I'm still thinking about it.
We lined up an hour and a half early on a Friday evening, I think we could have gotten away with coming an hour earlier instead but we wanted to ensure our spot in the first round of people seated.
Service was very friendly and super attentive. I liked how interactive the chefs were and how they'd share tidbits of information throughout the experience.

One of the best omakases I've had! I came here with my partner for our 4th anniversary dinner and it was absolutely amazing. The tasting course was fabulous, but I think the extra piece of fatty yellowtail we ordered at the end really blew our minds. The fish here is just so fresh!

Nigiri:
For the Canadian salmon, the wasabi spiced up the piece of fish on rice, soy sauce nicely seasoning the entire thing, slowly melts in your mouth.
The medium fatty tuna breaks apart nicely in your mouth, savory and quick.
The uni was soft, blended with the rice in your mouth, and the seaweed gave it a nice crunchy texture. It was incredibly enjoyable and worth the expensive price.
The soy sauce wasn't super salty, and was just enough umami to help increase the depth of the dish.
The Unagi was superb. It was nice and chewy, sweet and perfect. Very nice eel, and tasted exactly like how it should.
The tamago tasted exactly like a pastry. I was very confused at first. It was like custard. Very little rice, but good and sweet nonetheless.
Hand-roll (Temaki):
The fatty tuna roll was impeccable. It was heaven on another level. The green onion was perfectly mixed with the fish, and the rice served as an amazing base. It was perfectly sauced and exceeded my expectations.
Restaurant quality:
Our server, Brandon B(if that's how you spell it), knew how to top off and finish the meal. He gave recommendations, explained the fishes and where they came from, and was really helpful in enjoying the meal.
The restaurant itself looks very modern for a traditional restaurant, and located in a very busy place. Opens slightly earlier than normal sushi restaurants as well.

Omakase will leave you stuff and satisfied! We had the omakase and order individual sake on the side. Our waiter was exceptionally friendly and knowledgeable of the dishes and sake.
The omakase was true to authentic Japanese cuisine with no filler just all thrillers! So many delicious and different nigiri. Sushi Kashiba is as close to a perfect Omakase experience that you can get.
What I love about this place more than other places is that they are not afraid to use local fish where possible. Most fancy Omakase restaurants want you to believe that the best fish has to come from Japan but that's far from the truth.
My favorite sushi course here is the Geoduck and honestly the Geoduck you get to experience here served by Chef Shiro Kashiba is probably the best in the entire country. I've had Geoduck at Michelin Star restaurants but it's never as good as when I have it here in Sushi Kashiba.
If you want to get served Omakase by Chef Shiro Kashiba it's best to get to the restaurant at least 90 minutes before they open. If you get there 75-60 minutes before they open most likely you'll miss out on a spot in front of Kashiba but you'll still get a bar seating. Last I heard Chef Kashiba works Monday, Wednesday, and Saturday. Trust me waiting 90 minutes to get a seat in front of him is more than worth it. There's not a lot of sushi chef's out there that have more sushi experience than Kashiba. Wonderful service and some of the freshest sushi! Sushi Kashiba did not disappoint. The staff were incredibly attentive and kind. We enjoyed the variety of this omakase and it was the perfect dinner for a special occasion. :)

If you haven't been to Sushi Kashiba yet, it's a must!! I came with 2 friends and we sat at the bar. The dining area had a bit of a wait, so I recommend making a reservation before hand. It was a slightly intimate setting and the staff were so friendly and knowledgeable. I ordered the Poke and Miso soup. It was perfection! I can't wait to come back and try the rest of the menu.

One of Seattle's sushi treasures I would say. If you haven't been to one of Chef Shiro Kashiba's sushi restaurants, you are missing out. Now Sushi Kashiba always feels to me to cater to the more richer folks with the higher end aesthetics of the decor, glassware, and so forth. So it definitely feels nicer if that's more pleasing to you. But I personally like the simpler and more traditional look of his first restaurant.
I was lucky enough to walk-in and get squeezed in for a table for 2. Usually they are pretty booked and require a reservation, especially if you want to sit at the bar for the real experience. I was fine with just the table this time since I've had the bar experience before.
Per usual, I get the omakase at these restaurants because I like to try the variety of special and unique items they have to offer. And usually I'm pretty content and satisfied with the omakase.
The sushi is presented with a lot of care and is also fairly fresh with what they serve. Hard to disappoint. The service was also very good and quite attentive. So I'm very impressed with the staff there. Kudos to them.

If you are willing to spend $250 each, with drinks, then it is absolutely the place for Sushi. The owner is Shiro Kashiba, the founder of the Belltown "Shiro Sushi." He left Shiro in 2014 and founded this one, both his namesakes.
The idea is to choose one of the Omakase choices: counter, Omakase, or "Peak." They differ by volume and prices. Of course, it is OK to order Ala Carte, we enjoyed that very much as well.
White wines were not as smooth or buttery as I expected, not to say they were bad. They probably expect me to order Sake. There's no dessert menu. The Omakase ended with a dish that's somewhat sweet, but not really as dessert.
All dishes were excellent, the waiter was attentive, friendly, and helpful. It was a wonderful dinner experience.Helpful 1Thanks 1Love this 1Oh no 0
