Easily the best sushi I've ever had. Did the Omakase and was not disappointed. Higher end but felt like I got what I paid for. Will be back

Oof, it really hurts for me to have to give this place 3 out of 5 stars. I felt that the quality and experience has gone way, way down since I first dined here four years ago. Seems very touristy now, and I did not receive the same quality experience as I did four years ago.
The overall experience felt very lackluster. The chef didn't interact with us at all and I think that's the best part of the counter seats. To see all the fish and sushi being prepared and interacting/drinking with the sushi chef, is the best part of an omakase experience. Our chef kind of killed a lot of pieces. Some felt overtorched, had too much wasabi, immediately fell apart and tipped over after he placed it down, and extremely lacking in depth of flavor. He also seemed like he didn't want it be there. The rice also felt cold on certain bites. Fish quality was great, but not handled very well by the chef.

The sushi counter doesn't take reservations so if you want to dine here, you have to show up before they open and wait in line. From there you can select which seating you want to do and you can come back at that time. For a weekday in April, there weren't too many people ahead of us, but a line definitely formed afterwards.

The highlight honestly had to have been seeing Shiro in person, but even he couldn't help save this experience. Can't believe I went from highly recommending this place to all of my friends, to feeling extremely disappointed and not feeling the vibe at all. Having spent almost $250 on this experience, I felt like the money could've been used elsewhere at a different sushi spot. How often can you say that you've dined at one of Jiro's apprentices' sushi restaurants in your lifetime? Honestly, not quite often. I can probably make assumptions that this establishment is better than Jiro's too, don't @ me yet, let me explain. The sushi bar experience lasts as long as you like, unlike Jiro's where your meal is usually done in 30 minutes or so. I ate more than 20 pieces and each piece was more satisfying than the last. I also paid under $200 per person for the experience and was extremely stuffed. Lastly, based on who your chef is, you can try many different slices of fish that night. No two experiences here are ever the same. I feel that if you're learning from Jiro's apprentice, the techniques are pretty gosh darn close. Maybe I'm just saying all these things to make myself feel better because I know that in my lifetime, I'll never get to eat at Jiro's in Japan anyways, Hehehehe.
I've never dined at an sushi restaurant before that had as good of an Omakase deal as Sushi Kashiba. I honestly prefer this style of Omakase better because the chef feeds you whatever he wants until you tell him no more. Which means you can eat until your heart's and stomach's content and literally walk outta this restaurant as a giant sushi roll. When I told my sushi chef that I was full, he looked quite sad and said "One more piece," and you knew that he was going to be bringing out the big guns for the last one. I easily chomped down 25 pieces and it still didn't break the bank. For two people who ate up to 25 pieces, the bill came out to be $280, so $140 per person depending on what you end up eating. Gratuity is already included in the bill so you don't have to tip anything additional.
I'm from California and the most expensive sushi experience I've had was jū-ni located in San Francisco, which costs about $250 for one person with about 18 pieces of sushi, so yeah, Sushi Kashiba has the best deal I've seen ever. Also, it's located in Seattle so the seafood is super fresh. You also get to enjoy geoduck caught in Puget Sound!
The chef prepares pieces in a certain order and puts out things he thinks you'll enjoy. Our chef recommended the chawamushi because he saw that we spoke Chinese and recommended a dish he knew was popular amongst Chinese guests. It was very similar to a steamed egg custard dish but had pieces of seafood throughout. It was very flavorful and rich, warm and lovely, I enjoyed it a lot.
How was the wait at the bar? Easily two hours. You can't make reservations if you want to sit at the bar, it's first come first serve. As I mentioned, my experience was easily 2 hours so I can only assume that everyone else also takes this long to dine. Some guests were even there before I sat down and stayed long after I left. I probably would do the same if Shiro was my sushi chef.
I'm glad I stopped by Sushi Kashiba while visiting Seattle. You always hear about Umi Sake House or Shiro's other establishment Shiro's Sushi, but I don't think either of those places can even compare to Sushi Kashiba. So take the extra couple of hours during your Seattle trip and dine here, you won't be disappointed. It'll easily be one of the best dining experiences of your life. - Jan 25, 2024
One of the best omakase in Seattle! Food is so good & fresh! You will need a reservation. For best experience, try omakase bar seating but it is walk-in only so best to arrive 10-15 mins before 5pm when the restaurant open.

Sushi kashiba ruined my first wedding anniversary. My partner and I are from NYC, and moved to Portland within the last year. The sushi in Portland hasn't quite done it for us, so we drove up to Seattle after hearing about this place. We thought even if it's not up to par with New York omakase, it would still be a nice meal. Sadly, sushi kashiba was far worse than I feared. Hours later, I'm still scratching my head wondering if we'd been duped. The uni was not fresh, the rice was dry, the fish were ice cold and chewy. The waiters said the most gimmicky things such as calling tempura a "sushi donut." They tried to pass off a stick of cucumber shoved into 1/3 of a fish cake as a fancy amuse bouche. Please for the love of god stop hyping this place up, I'd rather spend $400 on grocery store sushi rolls instead.

2.5/5 STARS: Reservations: Reservations should be made in advance to secure a seating. If you prefer the full omakase experience at the counter, be prepared to wait in line for about an hour prior to opening. In 2017, we had a better experience at the counter, where the chefs selected the fish for us. However, this time, the omakase table experience was disappointing.
1/5 STARS: Customer Service: The customer service was average. While we were initially greeted by the front desk congratulating us on our wedding celebration at Sushi Kashiba, our server failed to inquire about the reason for our visit. He did not ask any questions, and although we were fine with that, other tables nearby received additional attention, such as complimentary sake, as they were celebrating special events. We didn't even receive a simple "thank you" for choosing their restaurant for our wedding event. Although that wasn't our priority, it's important for all guests to receive equal service, especially considering the fine dining experience of omakase and the extra dishes and cocktails we ordered.
1/5 stars: Omakase Quality: The omakase experience was very disappointing. We have been trying various omakase meals in recent months, and the fish quality at Sushi Kashiba has significantly declined. Only the abi shrimp and scallop were satisfactory. The nigiri, including salmon belly, tuna, and eel, tasted like lower grade fish compared to our previous visit in 2017. Back then, every fish we ate, from appetizers to the finale, was buttery and melted in our mouths.
Specific Issues:
-Omakase - Market Price: Priced at $150 per person, it did not live up to our expectations.
-AGEDASHI TOFU: The agedashi tofu was disappointing as it lacked crispiness on the outer shell and wasn't served hot.
-CHAWAN MUSHI: The fish in the chawanmushi was overcooked, and while the egg was steamed well, the overall flavor didn't quite hit the mark.
2.5/5: Ambiance: The restaurant is quite small, and the restrooms were dirty, which is not acceptable for a high-priced sushi establishment.

I tried so many new things, it was my first experience for Omakase. I super dooper enjoyed my time here trying new foods! I loved all the wonderful dish:

I ate about 16 pieces, my bf ate about 22 pieces.
You also get a Egg for dessert. Yummy.

The owner was there as well, enjoying himself eating good food and drinking.
Price for two people approximately $260 bucks plus additional Tip not included.

The best dinner I've had all week!! The view was beautiful. The service was top notch! The food was CHEFS KISS!!! We had to make another trip for dinner before we left. It was pricy but yes it was that good. Everything paired so well together and the fish just melted in your mouth. We did the Peak menu and had to order more from the a la cart menu just so we could get another tasting of the bream!! Yumm!! Highly recommend this place if you get a chance.

Best sushi ever! We live in LA now but every time we are in town for holidays we have to visit here because the sushi simply tastes so fresh and high quality. I know the price is not the most affordable but imo totally worth it. We had omakase before but this time we opted for the sushi dinner instead (we had to finish dinner by a certain time). But wow it did not disappoint and just reminded me how amazing it was. For $120 per person you get 12 pieces of nigiri, an appetizer, miso soup and a tamago dessert. We were worried won't be enough and talked about ordering more but by the second plate of sushi, we were happily stuffed. Everything tasted so good as always but our favorites are: toro (regular, seared, marinated), scallop (so sweet like out of this world), sweet shrimp (again super sweet and delish). I personally enjoyed the smoked fish in the end (I think it's mackerel) husband thought was too smoky for him.
Besides the food, I have to give a shout out to our server Jordan!! He's the best!! So kind, welcoming and knowledgeable. He gave us tips on how to best enjoy/pair the sushi with condiments or sake. He also shared with us his own stories and favorite fish (a rare kind that I've never heard of). Honestly we just loved talking to him and he made our dinning experience so so much better. He also gave us a "donut" sushi in the end because he had heard husband saying the mackerel was too smoky. Literally the most thoughtful - thank you Jordan!!
This place gets busy so make sure to reserve ahead. Not overly crowded but does get filled up. Everyone is respectful so noise level is minimal and we could hear our "neighbors" conversation - just a heads up if you want to have intimate conversations.

Best omakase experience! Dined at the chef's table, the chef was super friendly and the food was unmatched. The service staff were very attentive, helpful, and friendly. The interior is very aesthetic and welcoming. Would absolutely recommend, it's worth the wait and price.

We were able to get seats at the counter for omakase. Service was excellent. I actually paid a bit more to have a few more pieces. Quality of the nigiri pieces were above par. Our chef was very accommodating. The price has gone up in recent years. No, this is expensive because it's high quality fish not the cheap stuff you find at grocery stores. People should not come here if it's too much for them in price.

Omakase
No food really interested me after coming back from Japan. Sorry, but the food bar in Seattle is really quite low and overpriced
I do think that Washington has decent sushi though. I've been to Sushi Kashiba once two years ago and decided to try it again.
The temperature of the fish on the appetizer was a bit too cold and I did give this feedback to our server. Following that, the rest of the nigiri and the following courses were actually delicious and well prepared.
It's been a satisfying omakase meal
