    Don't let your life be all vanilla. It's time to give a new spin to ice cream.

    Bingsu (also spelled as Bingsoo), a traditional dessert in South Korea, is one of the most-sought after summer desserts in East Asia.

    In the earlier days, this delicacy was only available to the rich and nobles as it was difficult for the common people to get shaved ice due to the lack of modern refrigeration equipment.

    This unique dessert comes with different flavours and toppings. It consists of chopped fruit, condensed milk, strawberries, kiwifruit, small pieces of tteok (rice cake), chewy jelly bits, cereal flakes, fruit syrup and red beans.

    Ingredients:
    Frozen berries (mixed, thawed) - 150 gm
    Caster sugar - 50 gm
    Shaved ice - 500 gm, to serve
    Mixed seasonal fruits (cubed mango, blackberries, raspberries, figs, sliced strawberries, pomegranate, kiwi) - To serve
    Vanilla ice cream (scooped) - To serve

    Method:
    - Adding the berries to a saucepan with 2–3 tablespoons of water. Put on medium heat to make berry syrup
    - Once the berries start to simmer, stir in the sugar until dissolved and mash the berries with a fork until syrupy
    - Strain through a sieve and leave aside to cool
    - Prepare the fruit bowl on the side with shaved ice
    - To make shaved ice, add ice to a food processor and blitz in batches.
    - Keeping in the freezer until ready to serve. This is a perfect make-ahead dessert
    - Spoon over some of the cooled berry syrup and top with a scoop of vanilla ice cream
    - Enjoy
